Baked Feta Pasta

Ingredients
- 1 block Feta cheese
- 1 cup mixed olives
- 1 cup sun-dried tomatoes
- 1 cup red bell pepper, sliced
- 1 cup La Famiglia DelGrosso Uncle Jim’s Late Night Puttanesca
- 10 oz penne pasta
- Olive oil to taste
- Crushed red peppers to taste
- Salt and pepper to taste
- Fresh basil to garnish
Directions
- Pre-heat oven to 400 degrees.
- Place feta in the middle of a baking dish.
- Surround the feta with olives, sun-dried tomatoes, and peppers.
- Drizzle everything with olive oil, then season with salt, pepper, and crushed red pepper flakes.
- Bake uncovered for 30 minutes.
- Cook pasta according to package directions.
- Heat puttanesca sauce in small pot.
- Remove baked feta from oven and stir until all ingredients are combined.
- Add puttanesca sauce and cooked pasta to the feta mixture and stir together.
- Garnish with fresh basil.
Notes
- You can add some of the hot pasta water to this dish, and it will help the sauce bind to the pasta and make the feta cheese smoother and creamier.
- Try a variety of vegetables such as mushrooms, broccoli, tomatoes, asparagus, and onions.
